Strawberry and Apple Crumble

A high-fibre, healthier version of the classic apple crumble. Raspberries can be used instead of strawberries, either fresh or frozen.

ingredients

serves 4
1 pound tart apples
1 1/4 cups strawberries
2 tbsp granulated sugar
1/2 tsp ground cinnamon
2 tbsp orange juice
custard or yogurt, to serve

for the crumble

3 tbsp plain whole wheat flour
2/3 cup porridge oats
2 tablespoons butter

method

1. Preheat the oven to 180°C/350°F. Peel, core and slice the apples. Halve the strawberries.

2. Toss together the apples, strawberries, sugar, cinnamon and orange juice. Tip into a 5 cup ovenproof dish, or four individual dishes.

3. Combine the flour and oats in a bowl and mix in the low fat spread with a fork.

4. Sprinkle the crumble evenly over the fruit. Bake for 40 - 45 minutes (20 - 25 minutes for individual dishes), until golden brown and bubbling. Serve warm with custard or yogurt.
