Stuffed radishes

ingredients

makes about 30
2 bunches radishes, washed and trimmed, leaving a little stalk on each
1/4 cup quark or low-fat cottage cheese
1/8 level teaspoon cayenne pepper, or 1 level teaspoon celery seeds
1 level teaspoon poppy seeds

method

1. Cut downwards through the centre tip of each radish three times, making a star pattern and cutting almost to the stalk. Put the radishes in iced water in the refrigerator for 30 minutes, or until they open into a flower shape.

2. Mix the cheese with the cayenne pepper or celery seeds; if using cottage cheese, pass it through a sieve first. Pipe the mixture through a small star nozzle into the centre of each radish, or press it in with a knife.

3. Sprinkle the radishes with poppy seeds and arrange on a serving dish. Serve them at once, or keep in the refrigerator, covered, for up to 2 hours. Take them out about 30 minutes before serving time.
