Stuffed Turkey Drumsticks

ingredients

to serve 4
2 x 1 pound Turkey drumsticks
Salt and pepper
4 slices (4 ounce) Smoked back bacon
Rosemary leaves
1/4 cup butter
2 tsp All purpose flour
1/4 pint Chicken stock
4 tbsp Dry vermouth

method

1. Preheat the oven to 375°F (190°C).

2. Remove bone from drumsticks. Return drumsticks to their original shape, then season. Derind and chop bacon and stuff into cavities in the drumsticks. Close openings with skewers. Pierce the skin in several places and insert the rosemary leaves. Rub butter over drumsticks and place in a flameproof casserole. Cover and bake for about 1 1/4 hours.

3. Lift out the drumsticks and remove the skewers. Cut into thick slices, arrange on a serving dish and keep hot.

4. Add the flour to the casserole and stir over a low heat for 1 minute. Gradually add the stock and vermouth and bring to the boil, stirring. Simmer for 2 minutes then adjust the seasoning to taste.

5. Pour sauce over the turkey.
