1 pound strawberries, hulled and halved
2 nectarines, stoned and sliced
1/4 pound raspberries
1/2 vanilla pod, split lengthways
4 tablespoons superfine sugar
method
1. Put the strawberries, nectarine slices and raspberries into a bowl. Scrape out the seeds from the vanilla pod and mix them with the superfine sugar and 2 tbsp water.
2. Pour this vanilla syrup over the fruit, then mix gently.
3. Cover and chill for 2 hours, turning the fruit from time to time. Divide among serving glasses and serve with Greek-style yogurt or fromage frais.
