This cabbage dish can be cooked the day before and reheated for serving. It is a good accompaniment to goose, pork or strong-flavoured game dishes.
ingredients
2 pound red cabbage
2 tbsp olive oil
2 large onions, sliced
2 large tart apples, peeled, cored and sliced
2 tbsp cider vinegar
2 tbsp soft light brown sugar
1/2 pound rindless fatty bacon, chopped (optional)
salt and freshly ground black pepper
method
1. Preheat the oven to 180°C (350°F). Cut the cabbage into quarters and shred it finely with a sharp knife.
2. Heat the oil in a large ovenproof casserole. Cook the onion over a gentle heat for 2 minutes.
3. Stir the cabbage, apples, vinegar, sugar and seasoning into the casserole. Cover and cook for 1 hour, until tender. Stir halfway through cooking.
4. Fry the bacon, if using, until crisp. Stir it into the cabbage before serving.
