Sweet Potato Crepes with Duck Filling

1 cup All purpose flour
1/2 teaspoon Baking soda
3 eggs, lightly beaten
1 1/2 cups milk
1 tablespoon light olive oil
2 teaspoons ground cumin
3 duck breast fillets 14 ounce
1/4 cup olive oil
2 tablespoons orange juice
1 tablespoon lime juice
1 teaspoon pomegranate molasses
1/4 teaspoon finely grated orange rind
1/2 teaspoon sugar
pinch of ground cumin
2 ounce orange sweet potato, finely grated
2 tablespoons chopped fresh cilantro
fresh cilantro leaves, extra

method

1. Preheat the oven to moderately hot 200°C (400°F). Sift the flour and soda into a large bowl and make a well in the centre. Gradually add the combined eggs, milk, light olive oil and cumin, whisking to make a smooth, lump-free batter. Cover and refrigerate for 30 minutes.

2. Season the duck all over with salt and pepper. Heat a non-stick skillet, brown the duck over medium-high heat, then bake, skin-side up, on a wire rack in a baking dish for 20 minutes, or until tender. Rest the duck in a warm place for at least 5 minutes.

3. Combine the olive oil, juices, molasses, orange rind, sugar and cumin in a screw-top jar and shake until well combined.

4. Discard the duck skin, then finely slice the duck across the grain or shred into thin pieces. Wrap in foil and keep warm in the oven.

5. Press the sweet potato between sheets of paper towel to extract as much moisture as possible. Stir into the batter with the cilantro leaves. Spoon 1 tablespoon of batter into a non-stick or greased crepe pan. Quickly spread with the back of a spoon so the crepe measures about 5 inches across. Cook for 1 minute, or until lightly browned underneath. Turn and brown on the other side. Repeat to make 24 crepes. The crepes can be stacked, wrapped loosely in foil and kept warm in the oven.

6. To assemble, lay the crepes flat, and pile even amounts of duck in one quarter of each. Drizzle with pomegranate dressing and top with the extra cilantro leaves. Fold the crepes in half to enclose the filling, then into quarters. Serve.
