1 1/2 cups medium-ground cracked wheat
1/2 pint vegetable stock or water
1 tablespoon lemon juice
2 teaspoons virgin olive oil
1/2 level teaspoon ground cilantro
1/2 level teaspoon ground cumin
1/2 teaspoon Tabasco
3 level tablespoons chopped fresh mint, OR 1 level tablespoon crumbled dried mint
3 level tablespoons chopped fresh parsley
2 level tablespoons chopped fresh cilantro
1 small red onion, peeled and sliced
2 scallions, trimmed and chopped
2 medium tomatoes, de-seeded and roughly chopped
method
1. Put the cracked wheat into a heatproof bowl. Bring the stock or water to the boil and pour it over the bulgur. Cover and leave to soak for 30 minutes. Drain away any liquid which has not been absorbed.
2. Blend the lemon juice and oil in a salad bowl and mix in the ground cilantro, cumin and Tabasco. Stir in the mint, parsley, chopped cilantro and onions.
3. Stir the bulgur into the dressing until it is well coated and the herbs are evenly distributed, then gently mix in the tomatoes. Cover and leave to stand for 30 minutes for the flavour to develop before serving.
