3 pound chicken thigh fillets
2 cups natural yoghurt
1/3 cup white wine vinegar
1 tablespoon lemon juice
1 tablespoon ground sweet paprika
1 tablespoon cayenne pepper
1 tablespoon ground cilantro
1 tablespoon ground cumin
6 cloves garlic, crushed
1 tablespoon grated fresh ginger
2 bay leaves
3 capsicum, seeded and cut into small squares
method
1. Cut the chicken into bite-sized pieces and put in a large glass or ceramic bowl. Add the yoghurt, vinegar, juice, spices, garlic, ginger and bay leaves and mix well. Cover and refrigerate overnight.
2. At the same time, soak 60 small wooden skewers in cold water overnight.
3. Thread the chicken onto the skewers, alternating with the pepper squares.
4. Broil for 5 - 10 minutes, or until the chicken is tender and cooked through, turning often. Serve hot.
