4 chicken portions, skinned
salt
freshly ground black pepper
2 tablespoons butter
1 tablespoon lemon juice
for the marinade
1 1/2 ounce fresh ginger root, peeled and chopped
2 garlic cloves, peeled and chopped
2/3 cup plain yogurt
1 teaspoon sesame seeds, crushed
1 teaspoon cilantro seeds, crushed
1 teaspoon cumin seeds, crushed.
1/2 teaspoon red food colouring
for the garnish
lemon wedges
fresh cilantro leaves or watercress
method
1. Mix all the ingredients for the marinade together.
2. Prick the chicken pieces all over with a fork, then spread the mixture over them. Cover and leave in a cool place for 8 hours.
3. Heat the broiler to medium. Transfer the chicken pieces to the broiling pan, fleshy side down, and dot with butter.
4. Broil for 12 - 15 minutes. Turn the chicken pieces over and grill for 8 - 10 minutes, basting the chicken with the pan juices during this time.
5. Check by piercing with a skewer that the chicken is tender: if the juices that run out are completely colourless, the chicken is cooked. Transfer to a warm serving dish.
6. Garnish with lemon wedges and fresh cilantro leaves. Serve immediately.
