Tandoori shrimps

ingredients

makes 24
2 pound raw king shrimps (about 24)
1/2 cup natural yoghurt
1/3 cup finely chopped fresh cilantro
2 tablespoons finely chopped fresh mint
1 tablespoon chopped fresh ginger
2 cloves garlic, crushed
1 teaspoon chilli powder
1 teaspoon ground turmeric
1 teaspoon ground cilantro
1 teaspoon garam masala
few drops red food colouring, optional
2 lemons, cut into wedges, for serving

method

1. Peel and devein the shrimps, leaving the tails intact. Rinse and pat dry with paper towels.

2. Combine the yoghurt with the fresh cilantro, mint and salt, to taste. Pour over the shrimps, mix well and leave for 5 minutes.

3. Mix the ginger, garlic, chilli powder, turmeric, cilantro, garam masala and food colouring in a large bowl, add the shrimps and marinate for 10 minutes.

4. Thread the shrimps onto metal skewers and barbecue or grill for about 5 minutes. Turn the skewers once, so the shrimps cook evenly.

They are ready when they start to curl and turn opaque. Serve on skewers or loose with lemon wedges and side dishes.
