These slow-roasted onions develop a delicious, sweet flavour which is the perfect accompaniment to roast meat. You could prepare par-boiled new potatoes in the same way.

5 tbsp olive oil
4 tbsp sweet butter
2 pound small onions
2 tbsp chopped fresh thyme
salt and freshly ground black pepper
method
1. Preheat the oven to 220°C (425°F). Heal the oil and butter in a large roasting tin.
2. Remove the outer skin layer from the onions but keep them whole. Add the onions to the roasting tin and toss them in the oil and butter mixture over a medium heat until they are very lightly sauteed.
3. Add the thyme and seasoning and roast for 45 minutes, basting regularly.

Baby yellow or vidalia onions would be perfect for use in this dish as both types are recommended for slow-roasting. Shallots could be used as a very pleasant alternative as they taste excellent cooked in this way.
