6 ripe plum tomatoes, peeled and roughly diced
1/4 tsp golden superfine sugar
1 tbsp chopped basil, plus extra sprigs to garnish
4 tbsp extra-virgin olive oil
4 slices day-old ciabatta or baguette
1 garlic clove, peeled and halved
salt and pepper
method
1. Put the tomatoes into a bowl with the sugar, chopped basil and half of the olive oil. Cover and set aside for 30 minutes to allow the flavours to mingle.
2. Toast the bread on both sides until crisp and golden, then rub all over with the cut garlic clove.
3. Spoon the tomato mixture on top of the toasted bread, pressing it firmly into the bread. Drizzle over the remaining olive oil and season generously with salt and pepper. Garnish with basil leaves to serve.
