Tomato gratin

COOKING TIME: 35 minutes

ingredients

1/2 level teaspoon each dried basil and dried thyme
Freshly ground black pepper
1 pound ripe tomatoes, sliced
1 small onion, peeled and finely chopped
5/8 cup whole wheat breadcrumbs
2 teaspoons olive oil
1 level tablespoon chopped fresh basil or chives to garnish

method

1. Mix the dried basil and thyme together and season with pepper.

2. Cover the base of a shallow, ovenproof dish with a third of the tomatoes. Sprinkle a third of the herb mixture and half the onion on top. Repeat, then lay the remaining tomatoes on top. Scatter with the breadcrumbs and the rest of the herbs, and trickle the oil over the top.

3. Bake in the heated oven for 30 minutes, or until the tomatoes are tender and the crumbs browned. Sprinkle with basil or chives to serve.
