Ready-made pesto is high in fat but, as its flavour is so powerful, it can be used in very small amounts with good effect, as in these tasty toasties.
ingredients
serves 2
2 thick slices crusty bread
3 tbsp skimmed milk soft cheese or low fat fromage frais
2 tsp red or green pesto
1 beef tomato
1 red onion
salt and black pepper
method
1. Toast the bread slices on a hot grill until golden brown on both sides turning once. Leave to cool.
2. Mix together the skimmed milk soft cheese and pesto in a small bowl until well blended, then spread thickly on to the toasted bread.
3. Cut the beef tomato and red onion, crossways, into thin slices using a large sharp knife.
4. Arrange the slices, overlapping, on top of the toast and season with salt and pepper. Transfer the toasties to a grill rack and cook under a hot grill until heated through, then serve immediately.

Almost any type of crusty bread can be used for this recipe, but Italian olive oil bread and French bread will give the best flavour.
