Tomato Tarts with Feta Cheese Starter

ingredients

serves 4
5 ounce sheet ready-rolled puff pastry
11 ounce plum tomatoes, thinly sliced
pinch of superfine sugar
salt and pepper
5 ounce feta cheese, crumbled
1 tbsp chopped thyme
1 tbsp extra-virgin olive oil

method

1. Cut the puff pastry into 4 rectangles and lay on a baking sheet. Arrange the tomatoes on top, leaving a 1/2 inch border at the edges. Sprinkle over the superfine sugar and season well with salt and pepper. Scatter the feta and thyme on top and drizzle with the olive oil.

2. Bake the tarts at 200°C (180°C fan oven) for 15 - 20 minutes or until the pastry is golden brown and risen around the filling. Serve warm, or allow to cool, then wrap and take on a picnic.

If you have time, sprinkle the sliced tomatoes with a little salt and leave for 30 minutes to draw out some of the juice before draining and using them. This will make the pastry crisper.
