Tuna Fish Gratin

Cooking time: 20 minutes

ingredients

serves 4
3 tablespoons margarine
1 onion, finely chopped
4 tablespoons All purpose flour
1 2/3 cups milk
1/4 teaspoon dried dill
7 oz canned tuna, flaked
salt
freshly ground black pepper
1/2 cup fresh breadcrumbs
1/3 cup Cheddar cheese, grated

method

1. Melt the margarine in a pan and fry the onion until soft, about 8 minutes. Blend in the flour and cook, stirring for 1 minute.

2. Off the heat, add the milk gradually, stirring all the time. Return to the heat and bring to the boil, stirring.

3. Add the dill, the tuna and the oil from the can. Season to taste. Heat the broiler.

4. Turn the mixture into an oven-proof dish. Mix the breadcrumbs and the cheese and sprinkle over the fish.

5. Put under the heat for 5 minutes or until the top is golden brown.
