1/2 pound spaghetti
1 celery stick, chopped
1 small onion, chopped
1 can mushrooms, thinly sliced
3/8 cup butter
1 can (10 ounce) cream of chicken soup
1/4 pint milk
1/2 cup sharp Cheddar cheese, grated
2 tablespoons sherry (optional)
salt and pepper
1/2 pound turkey, cooked and diced
grated Parmesan cheese

1. Preheat oven to moderate, 180°C (350°F).
2. Cook spaghetti in boiling, salted water till tender. Drain and keep hot.
3. Cook celery, onion, and mushrooms in butter till tender.
4. Add soup, milk, cheese and sherry if used. Season well.
5. Cook over low heat till cheese has melted. Add turkey and pour over spaghetti.
6. Stir and place in casserole. Sprinkle with Parmesan and bake in centre of oven for 20-25 minutes.

Another way to use up Christmas turkey in a hot dish. Make a note of the ingredients and add them to the store cupboard well before the Christmas rush begins. Turkey tetrazzini would go well with a green salad and garlic bread (see next Cook's Tip).
