fresh or canned fruit — for example pineapple rings, cherries, bananas, pears or plums
1/2 cup butter or margarine
1/2 cup superfine sugar
2 eggs
1 cup + 2 tablespoons self rising flour
method
1. Grease a 9 inch deep cake pan or straight-sided baking dish with butter and arrange the chosen fruit in the base, in a decorative pattern.
2. Cream the butter or margarine with the sugar until light and fluffy. Gradually beat in the eggs and fold in the flour.
3. Spoon this mixture over the fruit and bake in a moderate oven (180°C, 350°F) for about 1 hour.
4. To serve, ease a knife around the side of the cake to free it from the container, then turn out on to a serving plate or dish.
5. Serve with whipped cream or custard
