1 pound potatoes
1 — 1 1/4 pound mixed root vegetables (not potatoes)
1 - 1/2 cups cheese, grated
SAUCE
2 tablespoons Butter
1/4 cup All purpose flour
1/2 pint milk or milk and vegetable
stock
salt and pepper
method
1. Cook the potatoes in boiling salted water until tender. When cooked, drain and cream them. Meanwhile, peel the vegetables and cut them into small pieces.
2. Cook in boiling salted water until tender.
3. To make the sauce, melt the butter in a saucepan and stir in the flour. Gradually pour in the milk, stirring all the time, and bring to the boil.
4. Remove the pan from the heat and stir the mixed vegetables into the sauce. Stir in most of the grated cheese and season to taste.
5. Pour the vegetable mixture into an ovenproof dish and top with the creamed potato.
6. Sprinkle the remaining cheese over the potato and bake in a moderately hot oven (200°C, 400°F) for about 15 minutes, or until golden brown.
Serve immediately.
