This is a good basic recipe that can be altered for different flavors. Try adding the grated rind of 1 lemon with the creamed fat and sugar, and 2 tablespoons lemon juice with the flour. Sandwich together with lemon curd. Or use grated rind of 1 orange and 2 tablespoons juice in the mixture and sandwich together with apricot spread.

1/2 cup margarine
1/2 cup superfine sugar, plus a little extra to sprinkle top of cooked cake
2 medium eggs
1 cup + 2 tablespoons self rising flour, sifted
2 heaped tablespoons raspberry or strawberry spread
method
1. Preheat oven to moderately hot, 190°C (375°F).
2. Grease two 7 inch round cake pans. Line bases of tins with greaseproof paper and then grease the paper.
3. Beat the margarine with 1/2 cup superfine sugar until light and fluffy.
4. Beat the eggs together then beat into the mixture.
5. Using a metal spoon, fold in the sifted flour.
6. Divide the mixture between the cake pans.
7. Bake the cakes in the centre of the preheated oven for 20 - 30 minutes, or until firm to the touch.
8. Turn out to cool on a wire rack.
9. Sandwich cakes with spread then lightly dust top of cake with superfine sugar.
