Walnut Fudge Cake

Rich Walnut fudge cake is topped with a delicious icing and then sprinkled with chopped walnuts.

ingredients

serves 8 - 10
3/4 cup soft margarine
7/8 cup light soft brown sugar
3 large eggs
1 3/4 cups self rising flour
pinch of salt
1/2 cup walnuts, chopped
2 tablespoons milk

Filling and decoration:
3/4 cup margarine
2 tablespoons milk
1 level tablespoon malted milk powder or drinking chocolate powder
3/4 pound Confectioner’s sugar, sifted
1/2 cup walnuts, chopped

method

1. Preheat oven to moderately hot, 190°C (375°F).

2. Grease two 7 1/2 inch sandwich tins with melted fat and line the base of each with a circle of greaseproof paper.

3. Put the margarine, sugar, eggs, flour, salt, walnuts and milk into a bowl.

4. Using a wooden spoon mix all the ingredients together then beat them for a minute.

5. Divide the mixture between the two tins and level the surface.

6. Bake in the centre of the oven for 25 - 30 minutes, until the cakes feel springy to the touch and they are coming away from the sides of the tin.

7. Leave on a wire tray to cool and remove the greaseproof paper.

8. Melt the margarine for the filling, then remove the pan from the heat and add the milk and the malted milk or chocolate powder.

9. Gradually beat in the sifted Confectioner’s sugar and when it has all been added and the icing is smooth, leave it on one side to cool and thicken.

10. Sandwich the two cakes together with half the icing.

11. Spread the remainder on top letting it flow down the sides of the cake slightly.

12. Sprinkle the chopped walnuts on the top for decoration.
