1/4 cup butter
2 tablespoons flour
1 1/4 cups apple sauce or puree
2 tablespoons lemon juice
salt
freshly ground black pepper
1/4 teaspoon grated nutmeg
4 whiting fillets, skinned and halved
1 cup fresh brown breadcrumbs
method
1. Heat the oven to 220°C (425°F).
2. Melt 1 tablespoon of the butter in a saucepan. Add the flour and cook, stirring, for 1 minute.
3. Gradually stir in the apple sauce and lemon juice and bring to the boil, stirring. Simmer until thickened.
4. Remove from the heat and stir in seasoning and the nutmeg.
5. Arrange half the whiting fillets in a greased baking dish. Pour over half the apple sauce and sprinkle with half the breadcrumbs.
6. Repeat the layers, then dot the top with the remaining butter.
7. Bake for 20 minutes or until the fish flakes easily and the top is golden brown.
