1 cake (0.6 oz) yeast
1/2 teaspoon sugar
1/4 pint lukewarm water
8 ounce whole wheat flour
1 teaspoon salt
2 teaspoons olive oil
TOPPING
14 ounce can peeled tomatoes, drained and sliced
salt and pepper
1 tablespoon dried basil
1/2 teaspoon garlic salt
6 ounce mozzarella cheese, sliced
8 black olives
1 tablespoon capers
method
1. Mix the yeast with the sugar and 2 tablespoons of the water. Leave until frothy.
2. Combine the flour and salt in a large mixing bowl. Make a well in the centre and pour in the yeast liquid, olive oil and remaining water.
3. Mix in the flour to make a smooth dough. Knead for 5 minutes, then leave to rise, covered, in a warm place until double in size.
4. Roll out the dough into a 9 inch circle and place on a greased baking tray.
5. Leave for 10 minutes, then arrange the topping ingredients on the dough and bake in a moderately hot oven (190°C, 375°F) for 30 minutes. Serve immediately.
