6 fatty bacon slices, diced
1/4 cup white wine vinegar
1 teaspoon sugar
6 scallions, chopped
salt
freshly ground black pepper
1 round (head Boston) lettuce, torn into pieces
method
1. Fry the bacon in a frying-pan until it is crisp and has rendered most of its fat Remove from the pan with a slotted spoon
2. Add the vinegar, sugar, onions and seasoning to the bacon fat in the pan and bring to the boil, stirring well.
3. Put the lettuce in a salad bowl. Pour over the hot vinegar mixture and toss well Serve immediately, sprinkled with bacon
