Winter Fruit Compote

ingredients

serves 6
3 ounce ready-to-eat dried pears
3 ounce ready-to-eat dried figs
3 ounce ready-to-eat dried apricots
3 ounce ready-to-eat prunes
1/2 pint apple juice (approximately)
1/2 pint dry white wine
1 star anise
1/2 cinnamon stick
light muscovado sugar, to taste

method

1. Put the dried fruits into a pan with the apple juice, white wine, star anise and cinnamon stick. Slowly bring to the boil.

2. Cover and simmer for 45 minutes until the fruits are plump and tender. Check the liquid during cooking to ensure there is sufficient; add a little more apple juice if necessary.

3. Turn the compote into a bowl. Taste the cooking liquid for sweetness, adding a little sugar if necessary. Leave to cool to room temperature.

4. Serve the compote with creme fraiche or thick Greek-style yogurt.
