Here is a sundae you can enjoy every day! The frozen yogurt has less fat and fewer calories than traditional ice cream, and the fruits provide vitamins A and C.
3/4 pound strawberries, hulled and halved
2 passion fruit, halved
2 tsp Confectioner’s sugar (optional)
2 ripe peaches, stoned and chopped
8 scoops (about 12 ounce vanilla or strawberry frozen yogurt
1. Puree half the strawberries. Scoop out the passion fruit pulp and add it to the coulis. Sweeten, if necessary.
2. Spoon half the remaining strawberries and half the chopped peaches into four tall sundae glasses. Top each dessert with a scoop of frozen yogurt.
3. Set aside a few choice pieces of fruit for decoration, and use the rest to make a further layer on the top of each sundae Top each sundae with a final scoop of frozen yogurt.
4. Pour over the passion fruit coulis and decorate the sundaes with the remaining strawberries and pieces of peach. Serve immediately.
