Zucchini Boats

ingredients

makes 30
5 large zucchinis
1 large tomato, finely chopped
2 scallions, finely chopped
1 tablespoon chopped fresh parsley
2 slices salami, finely chopped
1/2 cup grated Cheddar

method

1. Cut each zucchini into three equal pieces, about 1 1/2 inches long. Cut each piece in half lengthways.

2. Using a teaspoon, scoop a small hollow from each piece. Add the zucchini to a pan of simmering water for about 3 minutes, or until tender; drain. Refresh under cold water, then pat dry with paper towels.

3. Combine the tomato, onion, parsley, salami and Cheddar in a small bowl. Spoon the filling into the zucchini boats. Cook under a preheated grill until the Cheddar has melted and the boats are warmed through. Serve immediately.
