Zucchini Patties

ingredients

makes about 25
2 medium zucchini, grated
1 small onion, grated
1/4 cup self rising flour
1/3 cup grated kefalotyri cheese or Parmesan
1 tablespoon chopped fresh mint
2 teaspoons chopped fresh parsley
pinch of ground nutmeg
1/4 cup dry breadcrumbs
1 egg
olive oil, for shallow-frying

method

1. Put the zucchini and onion into the centre of a clean tea towel, twist as tightly as possible and squeeze dry. Combine the zucchini, onion, flour, cheese, mint, parsley, nutmeg, breadcrumbs and egg in a large bowl. Season well with salt and cracked black pepper, and mix with your hands to a stiff mixture that clumps together.

2. Heat the shallow-frying oil in a large pan over medium heat. Drop level tablespoons of the mixture into the pan and shallow fry for 2 - 3 minutes, or until well browned all over, turning once.

3. Drain well on paper towels and serve hot.

The patties can be served plain sprinkled with salt or are delicious served with tzatziki

NOTE: Kefalotyri is a pale hard sheep's milk cheese originating in Greece. In this recipe, Parmesan or pecorino cheeses can be substituted.
This recipe is best prepared close to cooking. Cooked patties can be reheated on a baking tray covered with baking paper. Heat in a moderate 180°C (350°F) oven for 3 - 5 minutes, or until warmed through.
